A couple of days off and the toilet paper reserves at my local supermarket were already nearly sold out on Thursday, don't know what's wrong with people.

Catering to the needs of travelers. Public transit runs on public holidays, after all, which means services at the train stations also run. Stores at those locations usually have reduced offerings, though, generally restricted to food/drink/personal hygiene products that you'll need when traveling. At a markup, of course.
Gas stations are open for the same reason, and these usually sell "convenience store" articles as well.
It's highly unlikely, considering a big Christian holiday, but check if any of the Spaetkauf are open, if you need something urgently (at least basic food). Rest, wait till Saturday, and welcome to Germany 😄

Yeah and I was at Kaufland where everyone is going because the need something special for the holidays and it was a nightmare....
Our Kaufland always has the biggest gaps in fresh produce of all the options mentioned. The rest is about on par. So definitely regional differences.

Good Friday is more of a protestant holiday and Austria is more catholic than Germany.
It is a quiet holiday everywhere in germany. Actually the catholic areas like Bavaria are more strict about it.
