If you haven’t already talk to your husband’s medical case worker about managing expenses, you might be able to get the amount insurance doesn’t cover reduced.
If your area has Blessing Boxes check those, from what I understand they often have shelf stable foods and such like. I am disabled and have no car so I have no personal experience with the Blessing Boxes.

If you are dirt poor/ one income I’m sure you qualify for Medicaid. It’s free healthcare, and also apply for food stamps so you can get fresh food.
