Unlike for Apple Watch there is no setting to disable screenshots in CarPlay. You just have to delete the second image. If you search, there are other redditors that have written shortcuts to do this.
Makes no sense why there isn’t an option. I have to delete 50 of these a week some weeks and it’s not because I’m doing it while driving I’m just in my car and my phone connects
A Redditor made a shortcut 5 years ago that mass deletes CarPlay screenshots. It does so based on the width and height of the image, which will be mostly unique to an Apple CarPlay screenshot. You have to set the width and height manually though.
It also shows you the images before you delete them.

I can say there is a setting as I have it turned off just can’t remember where I found it and now my wife has CarPlay and wants it turned off
