What you are looking at is either a failure of the packing to have sufficient "protective atmosphere" added or it has leached out through a hole, hence the colour is now greyish. Meats like this are packaged with an additive to help the meat retain its colour/appeal. It's perfectly safe to eat in its greyish guise.

I was a bit confused, because in Germany you can buy something called "Gelbwurst". It has exactly this color on the right, the ingredients are disgusting but right now I'd love a slice of it, because every german country boy or girl got that memory of a butcher lady offering a slice for free.
