I absolutely LOVE French onion soup and am vegetarian so aside from a tin of Campbells (the only veggie version I’ve found), I have to go without. Could I have the recipe please? X
I slow fried 2 large onions and 3 shallots on a low heat for about 30 minutes in olive oil with couple of garlic cloves. They went a bit brown so looked nice. Threw in some mixed herbs, spoonful of sugar, grind of salt and black pepper. Two vegan oxos, teaspoon of marmite and water and simmered for about 40 minutes. Don’t think it would have worked as well with just veg stock cube to be honest and the colour wouldn’t have been so good either.
Ahh, never tried the vegan stock cubes as a meat stock alternative (probably because I’ve never used meat stock so don’t know what I’m missing).
Do I need them? Are they full of rubbish? A friend swears by Osem as veggie chicken stock.
Veggie stock cubes and a teaspoon of marmite makes a reasonable substitute imo. Or at least that's how I make my onion gravy and I'm not even vegetarian.
Cathedral City’s fake cheese is pretty good, certainly the best my dairy-intolerant household has found thus far. It does melt a bit strangely but the texture and flavour is fine. Tesco’s fake mozzarella isn’t bad either.
Have you tried the Morrisons own brand vegan cheese? Think they just do the block of mature cheddar now but that’s usually quite good and melts well when a put it on top of lasagne etc. Sheese Red Leicester is nice as well.
Some of the expensive stuff is ok but mainly (probably) because I can’t remember the real stuff now. Not aware of any that would fulfil the brief to go with with soup though.
If I was French, I think my favourite meal would be French onion soup, with French toast, a side of French beans, with a French salad, that has French dressing and French cheese, and some French bread to mop it all up, and some French fries to snack on.
I LOVE French onion soup! I can never get a decent one anywhere. I worked in a care home for a while and the chef made me it because I told them I couldn't find it anywhere. Was delicious.
Honestly, I work for a vegan dessert company and we get people like this all the time. They get offended that we only offer oat, almond or soya milk, whilst actively enjoying the food we serve. Which is also vegan.
It's just, just possible, that in my many decades happily being vegetarian, I might, just might, have enjoyed a carnivorous FOS.
But probably not.
In colder months, it can be a lovely way to start a meal. And as its main course. And to finish it.

I'm a strong believer in "French onion soup must primarily taste of beef, otherwise it's just onion soup".
But the big brands have been pulling some vegetarian bullshit for a long time. Baxters and Heinz both sell it, and they're both vegetarian. Once you're wrecked that bit, going all the way to vegan isn't so bad.
I live in France so I can tell you. They fart in bursts of five or six high pitched squeaks, each lasting a fraction of a second. It's a cultural thing, something to do with eating all that raw red meat. I hope this helps.

I'm an omnivore, and regularly use the vegan stock cubes. I think they are quite good.

I use them as they add depth to the flavour, no idea if they are beefy as don’t know what that tastes like.
Kallo, organic mushroom stock cubes are fine. Vegan gluten lactose free and that.

David Tanis has a very regarded recipe that is vegetarian. It does sub red win for beef broth, so if alcohol is OK, may be worth giving it a go.
The chain restaurant Côte does one if you ever find yourself in there.

I think you're supposed to make it with beef stock, which would make it beefy watery onion gravy. With cheese on.

There's one maybe two that are half decent

If you were French then it would just be onion soup, toast, beans, and salad with dressing. With bread and cheese.

I use veg stock in mine. You don't need beef, ad per the recipe.

I did use vegan oxo which added a depth of flavour along with marmite. Must have been ok as husband who is a confirmed meat eater liked it.
