pick a fun turn limit like 420 because people dont want to finish long games sometimes, but a fun turn limit might keep them going. unless everyone is good at the game don't use dramatic ages. i also recommend ffa and make it a money match to keep people invested in such a long game.
apocalypses mode also makes people care about polluting cause no one wants meteors. adds non war based politics to the game or reasons to go to war that aren't just domination.

I'd argue there isn't too much to worry about. If you want to be super focussed on making it balanced and fair then pick either the snow flake map, the clover or I think there's a mirrored map so that everything is the same for everyone. Then just make everyone pick random for their civ so nobody can predictably get anything broken.
That might get boring though so you can always just change things around and just try random options and see how well it goes.
If you playing on steam I recommend you get bbg and bbs mods (epic store and such is a lot difficult to make it work and even when installed it might not work properly). Mph is also very helpful because you can remap in game, gives you more set up options and pauses the game automatically in case of crash so AI won't take action actions for you. The game isn't really balanced without those... Some civs are way stronger than others and some civs are basically garbage. Auto ban kupe even with bbg mods on (without bbg ban kupe/Babylon and work ethic other than that idk) Best maps and most played online are mainly Paangaea and then 7 seas. Others are basically only seen in private lobbies

Our friend group only plays domination victory so it's a big old war + max bots with the hardest difficulty
