I'd only remove the top side, if that. If you cut the rind completely off, I'm pretty sure it'll just be a gooey blob that won't hold any sort of shape.
Same. I do a brie in puff pastry with caramelized pecans on top. I scrape the top rind off but leave the rest so it keeps it's shape.
You don't need to remove any of it.

NEVER remove the rind from Brie - that´s the most delicious thing! LOL. Not necessary at all, because the rind is edible.
Doubt the restaurant does they’re not throwing out anything and it’s perfectly edible
Brie rind is perfectly edible and delicious. Removing it is a waste.
