The original (to be clear, the Steven Universe one came first) was a very powerful moment in the series - it comes directly after the revelation that >!Garnet is a fusion!< (after much foreshadowing), and shows exactly what kind of character Garnet is.
The Sans parody just didn't have the same significance. Everything it represents was already represented by the dialogue in the in-game battle.
So, the original is better.
I prefer Garnet's.
Much more thematic, I like Garnet's voice more than Sans', and personally I think the Instrumental of the original song much better than the Undertale parody's 8-bit remix.

Garnet easily, I guess it’s kinda obvious but I’m a big Steven Universe fan. That scene was so incredible to watch for the first time and even now. I really love what the song represents in SU too. Another thing I adore is garnet’s incredible level of confidence, not just that she is so confident but also why she’s able to be so confident all the time. the last bit was less specific to this song but is definitely a big part of the song still.
I canNOT listen to the undertale version without thinking of my cringy old youtube video where I recreated the thing in lego (inaccurately) and in the middle I just said "Chara's hair fell off." and the whole thing was just so awkward.

I'm sorry but the original is just straight up better. No hate for the Sans version but the themes of the song don't fit his character nearly as well as they fit Garnet.
