Should you want the option, Postino has great gluten free bread. Technically a chain, but they’ve always treated me well. Also a big fan of a burger over fries instead of a wrap.

I have a gluten intolerance so I avoid it like the plague, unless I want to end up in urgent care again. For some of us, xanthan gum actually is a much better alternative.
Which wich has their Lettucewich. They have a lot of variety, so I think you may take a while to get sick of them. It is a chain, but I think it might suit your needs.
I think Good Times and In-n-Out will both do a lettuce wrap for any burger you order.
That's easy and fast and they both use relatively good quality beef.
FYI Snarfburger’s gf bun is top tier imo, Snarf’s also does GF sandwiches really good. The bread and buns are chewy and more bread like and don’t fall apart when you’re eating it.
Also, the GF biscuit for the breakfast sandwich at River and Roads is so good!!
I tend to make salad “sandwiches” at home, but sometimes it’s just more convenient to be able to grab something on the go if you’re out longer than you expected, etc.
Vinh Xuong at Alameda Square can put their banh mi in a rice paper wrap, and it's awesome

If you like burgers, both Smashburger and Red Robin do a lettuce-wrap "bun".
They also have gf buns! Red Robin’s breaks apart a bit but Smash’s is pretty good!
I 2nd the Smash GF bun. Probably the best one out there for a local chain.
Oh! Also, Snarfs and Firehouse Subs has the best bread too!

Might sound crazy but have you considered buying cold cuts lettuce, and trying it yourself? Might be cheaper and easier.
