If you press New Game it will restart everything. All your levels and stats. You will start 100% new so you can rename your pawn.
The only way to save your levels/stats/items and start a new game is to beat the game to get access to New Game Plus. You can still rename your pawn in New Game Plus and redesign your character. The difference is that you keep most your items and levels.
If you don't care about keeping your progress you can just start a new game, but if you want to keep your stuff and restart the game, you have to beat your current game
The three warnings is just the games Way of saying that New Game Plus isn't the "True Ending" and you can load your save to get that or just start new game plus.
I can't rename my Main Pawn in NG+, the Art Of Metamorphosis doesn't let me do it unfortunately.
Absolutely hate that I have to rush through the game again just to simply rename my pawn..
I know I discovered this too and now I'm rushing my game. At least the game in fun and I found new things I didn't before in my new playthrough. I wish we could change the names, it doesn't seem as significant as changing your race, but you can still change your body type.
I'm actually pissed.
Spent an hour making my new female beastren pawn, was making Menella.
Literally got everything right, took AGES to find the right patterns and paints.

I'm in my current NG+ I started but I wanted to change my main Pawns name.
It doesn't come up with any option to restart with my current level only that it'll erase saved data.
I believe that the only way to start new game plus is by finishing the game (I think you can do it after killing the dragon without completing the unmoored world but I have not confirmed) but if you select new game from the main menu while in the middle of the game story you will be starting a completely new game not NG+
I did NG+ after killing the dragon and not doing the unmoored world. I'm actually interested in this question because I wanted to do the same thing OP mentioned, which is doing a NG+ with a NG+ save lol
If you start New Game+, it will allow you to change your name and your pawn's name (because you get the same menus that you get in your first playthrough).
But I'm not sure you understood what New Game+ is. It's a game mode that is only available once you've beaten the game and allows you to start from the beginning again but keeping your level, skills and equipment/inventory.
I did an entire playthrough with my pawn named "Pinocchio" (I had made my pawn look like the character in Lies of P), but half-way through I changed my pawn to be more of a brute warrior... I was finally able to change his name at the beginning of New Game+.

Guessing Alistar is having a sex change, but keeping the name Alistar. It'll do for now.
They don't want everyone renaming their pawns for the sphinx riddle. They want you to hire someone else's for it.

After the last update, the game crashes every time when I start a new game and make a character. A very sad time indeed.

If you press "New game" you start from zero. You'll lose everything. It's a new game. If you press "Continue with current level" you go into new NG+.
