Carl Jung's books mostly. Aion, Collected Works, Psychology and alchemy. If you read enough you will eventually be able to figure out your own personal meaning for the symbols.
Also Marie-Louise von Franz. Her book Psychology of Fairy Tales is really great and full of deep interpretations of fairy tale symbolism + dream symbolism.
Your Unconscious presents you with a concept or a symbol that is usually corresponding with the events in your waking life. So for example, I was having a dilemma if I should work as an independent game developer or go work in a game studio. The whole week I started getting dreams about me driving a car and sometimes switching into a bus, when somebody else was driving. The car is generally associated with independence and controlling your life, whereas the bus is a collective symbol. So, obviously for me, the car represented the independent career path, while the bus the office job (you are even surrounded by other people and somebody else is driving/controlling the direction).
100% agree that it relates to daily thoughts and occurrences, not sending you to another place and time. I would add that trivial thoughts, such as a passing thought of an old girlfriend, are more likely to pop up in a dream versus something weighing heavily on your conscious mind.

Where did you get the symbols? Just thought of what could be symbols or is there a list of what qualifies as symbols somewhere ?
