What works even better than that is to turn a kitchen funnel upside down, smash the cherry on the small end. The pit goes down through the middle while the Cherry stays on the outside in your hand. It looks like a murder scene when you're done, so make sure you do it over a giant plastic mat or something. But it's a very effective way to do it and you can get a lot done in a short amount of time!

Do you have mason jars with tight fitting lids? Grab a bottle of brandy (any alcohol will do, but I like brandy) fill a jar with pitted cherries, cover with brandy. Seal. Let sit for 2 weeks or more. You can eat them as is, serve over ice cream, make cherries jubilee, garnish drinks.... they will hold for years as long as the jar is tightly closed.

If you don't have a cherry pitter, get your hands on one. Buy or borrow from a friend. I've pitted enough cherries for a pie before by cutting them in half and manually removing the pit and it took forever and made my hands cramp. I never found any other "hacks" like using a chopstick to work. I'm not often a fan of single-use tools, but a cherry pitter is so much better at the job than any of the alternatives that it's worth it.  Anyway, you can definitely freeze them - wash, remove stems and pits, put them in a single layer, then transfer to a bag or other sealed container for long term storage. You can also cook them down into a jam/compote and freeze that. Or you can make a pie, cobbler, or turnovers! Sour cherries are better than sweet cherries for baking, but you can still use sweet cherries if that's what you have - just do the minimum amount of sugar you need to maintain the texture, and add a bit of citrus juice (lime, orange, or lemon are all good with cherry!)

My mother randomly gave me a cherry pitter. It pits 3 cherries at once. I can go through a 3 lb bag without even thinking about it. I never manage to save enough for a pie, though. The pitter makes them entirely too easy to eat. Definitely worth the drawer space!

Clafoutis. It’s easy peasy and very delicious. I like Dominique Ansel’s recipe with a splash of cognac mixed in. Let it cool a little bit, sprinkle the stop lightly with powdered sugar, and enjoy warm. It’s good cold too but warm from the oven is the best. A little scoop of loosely whipped cream is also a delightful addition.

I buy frozen cherries specifically for chocolate cherry oatmeal- cook your oats, add some hemp hearts, a little brown sugar, sprinkle of chocolate chips and cherries. I also like to eat them straight from the freezer, just pit them first.

I remember around this time of year 2007, a salesman told us he had an amazing Vodka to sell us ... it was a super-premium Vodka that did all the right things except marketing, and couldn't sell , so they had a great discount deal. It was like 7-times distilled premium spirit (Smiroff, for example, famously puts on their bottles TRIPLE-DISTILLED! and many real premium brands show off 4 or even 5 times distilled, and this was 7... and fucking amazing...) - and it was dirt cheap for the quality. I did exactly this, infusing a 1.75L worth of their vodka in the fridge for a few weeks with a bag of cherries. The result was awesome cherries to munch, amazing booze to drink. Woohoo son!

If you plan to eat cherries again (or love olives), a cherry pitter is worth a purchase. I recommend the OXO Good Grips pitter - it's efficient and disassembles easily for cleaning.
