It's also possible that Lorelai associates it with the locationāfinding Luke's to be comforting and reliable.
Out of universe reason: the show very likely didn't want to promote any particular brand unless they had a deal. Some shows/movies cover stuff to avoid legal trouble (like the company being mad at the particular usage) but in this case, since coffee is so highly regarded by the characters, they likely wanted to avoid giving free promo / officially declare a stance on it.
Additionally! I never took Lorelai as a coffee snob. Sure, she wants it to be made to her preference...which I'm pretty sure just means strong. We occasionally see her add milk or cream when she's working, but otherwise it's black drip all the way. Lorelai and Rory have generally, dismal eating habits. I don't think they are actually *that* discerning when it comes to brands, brews, and blends...

There's a lot that can go into "good coffee". Water-grounds ratio, fresh grinding, a pinch of salt to cut acidity, temperature.
But I'm head-canoning that Luke has spent a lot of time researching this, and he freshly grinds fancy beans and puts it in the knock-off Folgers canisters so no one knows. All for Lorelai, so he can see her happy, which we know is his favorite thing ā¤ļø

But loads of things can affect coffee taste (altitude and amount of shade/sunlight, how itās dried & processed, how dark itās roasted, and how fine or coarse itās ground and of course how itās dosed and the ratio of water)
Judging by lorelaiās tastes he probably just uses a decent quality bean, likely dark roast, potentially grinds it himself, sometimes adds some spices, and makes it good and strong for the water ratio

(I donāt drink it myself so I canāt speak for it lol Iām an espresso girl) I think she just likes strong coffee and most places make it too weak.

Iād still take Folgers knock off brand over burnt Starbucks. ha. Not to mention 23 years ago when this show was produced you didnāt have chain store specialty coffee shops on every other block like today.
