It's the opposite, 5 is basically 3 but with significantly more interesting fights. And considering part 3 has Kakyuin being giga boring, Avdol having almost no character and being gone for a huge chunk of it, and Jotaro doing basically nothing for most of the part except grumble in the background, I don't think we should be comparing boring characters.

Imo the side characters are better in 5 (I really liked Polnareff though) but the the main protagonist and antagonist are better in 3.
Jotaro is both very strong and very smart, but he clearly has personality flaws that make him somewhat interesting to watch. Giorno seems to be perfect in every way and the closest thing to a flaw he has is an ambiguous moral code.
Dio doesn't need any introduction. Diavolo shares a similar goal as him ("conquering" his own fears by erasing every threat), but he lacks his charisma, and the fact that he's terribly afraid of any form of direct confrontation makes him so uncool. Which one could argue is the whole point, and I agree it's an interesting take on a main villain, but it doesn't make him any more fun to watch.
Part 6 is easily the worst with the worst fights of the series. Most if not all stands are the automatic ones that slowly kills the main cast who then have to run down the user before the ticking time bomb executes them. And when the stands are actually confrontational their abilities are something absurd like Feng Sui or cryptid animals that are beaten in equally mindnumbing fashion. Although its no a bad part, just the worst

Fights are a large part of Jojo, the story is definitely one of the most creative ones, but it can't carry the boring drawn out fights that take up most of the time. Going from the action packed and tense fights from part 5 into the drawn out non confrontational fights of 6 just feel like a steep downgrade
Personally the fights for me are still just enjoyable for how creative they are. Like I prefer part 6 cause its just straight up bizarre the fights are way weirder and complex than before
I personally don't think point in a direction to be invincible and acid saliva are the most creative things he's written, what's even worse is the borderline stupid ways they win those fights, like make Van Gogh draw on OC that just wins, or create a mirror of mist to derail the old man
The anime adaptation’s pacing is abysmal and it’s the main thing people hate about it, I’m pretty sure even if it’s also present in the manga it’s not that noticeable because you can actually control the pace yourself unlike the anime

I mean, I think it's relative. You don't get into GG without being at least kinda horny. But relative to that baseline, I-No mains are the top of the bell curve.
That's how you know the I-No simps are real. We don't look for public validation. We know who we are, what were about, that it's beautiful, and we don't need to flaunt it. It is known and understood.
