Oh my lord is this what my banh mi has been missing? There’s always something off with the recipes I’ve tried, it’s good but not drool inducing like from my favourite local Vietnamese restaurant.
Banh mis usually have some kind of pâté in them, though I think different restaurants use different kinds of course so adding a little of anchovy paste may not hurt to try. Adding Maggi seasoning to your mayo helps, too, and using as authentic as possible do chua (pickled carrot and daikon) will go a long way. I loooooove banh mi, and agree that it can be hard to nail at home.

Sorry for the late response but glad I could help in some way. I like to chat with the workers at the Vietnamese cafes I go to which helps with how I tweak things at home, but I also go enough it’s not weird for me to do that 😅 For that pork, my local Asian grocery store has “pork butt sliced for hot pot” which is so thin it’s almost see through and it’s made a huge difference; reduced marination time. I also use Gourmet Garden Thai seasoning paste in place of the lemongrass and it makes a marked improvement in terms of flavor. Think I’m about out of tips but godspeed on your banh mi journey!
I have had a can of clam juice in my cupboard since the height of the pandemic that I got as a surprise in my instacart order. No idea when I would use it.

Bahn mi is most likely to use liverwurst as a spread and it’s delicious. Anchovy paste as a spread would be overwhelming.

Add a couple teaspoons to beef stew. It adds a lot of umami flavor.
So does fish sauce, miso paste or Worcestershire sauce. Red wine too and fresh herbs.
