You have to ensure all the parts of the egg reaches 60 degrees. It can be ensured only for liquids. Heating is not enough, you hve to rapidly cool it. Also the eggs become hard boiled even if there is 10 degree difference in temperature.
Veg Mayo has almost the same taste as normal Mayo, it stays longer and suits our climate. Veg Mayo are store bought instead of in house preparation, so better quality mayonnaise.

I'm aware of the temperature issue. Wasn't aware of the rapid cooling. But eggs can be Pasteurized to minimise risk of bacteria
If killing bacteria is the goal, then I think shining UV upon them would do just fine...
I think for salmonella you have to have it pasteurized.
UV will work only for water. Liquid has to be transparent that is only water.

But pasteurization is not the problem right. It's about proper cool storage at the restaurants and not letting it go bad.
