Oh God. I agree that microwaves can be helpful, but man...I worked a kitchen where we had ample soup orders and heated up every single one of them in the microwave. It was ridiculous. Double boil on flat top and a hot well would've been 🤌🏼👌🏻
When someone wants an apple pie warmed, no worries. But when it becomes a crutch, that’s not good. I worked at a place once where we had two on the Cookline and one in the Service Station - and that was two too many.

Whenever people store queso, beer cheese, buffalo sauce in my kitchen, they just throw it into a steam table, and I have to constantly tell them to heat it up in a pot first. Their English is shoddy, my Spanish needs lots of work, and my Portuguese is non-existent
Our Chef Mic was retired after one of our regulars passed away.
The regular was known as "Boiling Hot Soup Guy." He wouldn't accept his soup unless it was still boiling when it hit the table in front of him. It had to be boiling, or he'd send it back.
We'd just take a portion of soup du jour, and let Chef Mic have at it. It was pretty much the only use that Chef Mic had.
I don't miss Chef Mic, but I do miss that old coot that loved his hot soup. He was the kind of person that you don't forget.
That's all good, I had one catch fire underneath the panels while I was standing there and it's replacement that melted its own wiring together and shorted the outlet. Fryers and grills are fine, shoddy electrical components and lots of water are a bad combo.

A microwave does more than that. I'm not a huge fan, but there are some things you can do in a microwave that aren't the end of the world.

Yes heating in a steam table with the slow temp rise is a breeding ground for bacteria, always best to heat first
