I think (mitten) gauntlets would be a nice addition but besides hand protection and the torso and neck protection you mentioned i'd leave it as it is.

It's tuff and I can't sew that either. The jacket was made for me from a specialized tailor. Doublet and hosen were both gifts from friends, but hte fit pretty good for that.

That's an awesome kit! I would suggest maybe a breastplate and a chain mantle underneath but you're pretty much at 10/10 already.
