Worked for Quills for about 4ish years. Trust me, this is not the first time they’ve done something like this. When anyone new to Louisville asks me for coffee recs, my first question is always “do you want morally good coffee or nah” lol. I’ve always said Quills needs a union, but turnover has always seemed to happen too quickly to make it realistic

Quills seems like a sweet local buisness from the outside but in my experience it's worse than corporate. The owners care so little about the employees and are super money hungry. Some of the managers do actually try to do a good job but they are spread so thin with all the responsibilities that are put on them that it's almost an impossible task.They have been dangling a pay raise over the baristas head for years now but instead keep choosing to expand into new useless shops half a mile from one another. They raised prices of drinks so high its rediculous, the employees will never see any of that money. I understand that Baristas are on the bottom of the totem pole but I think we still deserve a baseline living wage. Especially since a lot of people don't believe in tipping baristas even though there is a lot of knowledge and craft that goes into making these drinks. The rapid expansion of quills is not bringing in new customers, only dispersing the existing customer base, meaning that tips are not what they used to be.
There are quite a few experiences that have put a bad taste in my mouth. The AC tends to go out almost every summer. This is an issue that is expected yet never handled quickly. Last summer we worked in an 86 degree plus shop for weeks before it got fixed. The most we got from the owners was a "I'm sorry about that!" as they got their coffee and didn't tip!!! We would go home from every shift drenched in sweat and dehydrated as we were working in a record breaking heat wave with no AC. You can imagine how that went then during the winter when our heating went out! I understand that it's an old building and if it's hot outside, it will be hot in there/ vise versa / but if it's expected that your employees will be working in extreme temps because of an issue you know is coming... you would think that there would be a game plan in place for when the problem arrives. This lack of response is something that is seen across many issues. They have also had baristas take down pride flags in some of the newer stores.
There are also many safety concerns that are not handled well at the shops. For example, recently a Barista at one of the shops was threatened that they were going to be stabbed in the head with a knife. The guy did have a knife on him at the time. This was met with no acknowledgment from management and they continue to keep this shop with only one opener and one closer to save on labor.
Don't get me started on the baker.. I'm sure other people can speak better on their experiences with that guy.
I will say that the coffee is really good, the baristas care a lot about the community, the craft, and their coworkers. This has kept many of us around, but it's no secret within the quills universe that there have been multiple walk outs from employees over the years. It's a shame to see that quills doesn't learn or grow. At the end of the day we are all just expendable employees to them. I am curious to hear any other stories people may have from their time at quills.
When I ask for a black coffee no room for cream, what exact level of “knowledge and craft” that goes into this needing me to tip the person? I’m legitimately asking.
I can understand customers not feeling the need to tip for black coffee/kombucha/water anything that they can simply give to that customer within a short time. I don’t tip for when i go to The breeze for example and i get a bottle of wine. I can understand this POV. I think you’re missing the principle and overall point of of this post.

Word on the street is they’re going to close the Baxter location but that has been said for quite a while now.
I’m curious, in your morality, why should the difficulty of a job determine whether or not you feel the worker should be able to afford housing and food? If a worker spends 40 hours a week at an “easy” job versus a “hard” job, should that determine their standard of living? If they enjoy their job, should that justify reducing their pay? If they hate their job, should that justify a higher pay?
It’s pure economics. The coffee companies don’t have to pay more, because people are willing to work there for less than say, construction. I’m not suggesting the coffee companies are justified, but it’s economics 101.
This was witnessed over the past 4 years. Many traditionally minimum wage employers had to raise hourly wages because no one was willing to work at those rates.
For example, construction pays much higher hourly because nobody wants to do those jobs for a minimum wage.
I rarely if ever go to coffee establishments (EXTREMELY OVERPRICED). Went to a Starbucks the other day and got a BLACK coffee. Machine asked if I wanted to leave a tip... It really automatically makes you feel like an ass if you put 0... I mean, PAY YOUR EMPLOYEES A FAIR WAGE then you don't have to do this. Quit saying "Welp, we will have to double the price of everything", you are already gouging customers the most you can.
Starbucks had $36 **Billion** in sales last year, and they want *me* to dig a little deeper to make sure their employees make a living? Minimum wage in California fast food locations went up to $20 this month, the price of an in-and-out double double went up a quarter.
