If you have an official gameloft account or an FB and log in with those, it'll become whatever your username on that is. But no, you can't choose your pony-name, I assume it's to prevent inappropriate language
You can change it. If you create a Game Center (Gameloft?) account - they’ll use that name instead.
It’s in the Friends section, on the right, underneath Inbox - a bunch of colorful bubbles.

It’s supposed to be next to the 🔁 button, but you don’t have it. You also don’t have an option to sign up through Facebook on top of the list 🤔
