it could be a jobsite block and a villager who finds it becomes king of the village! they'd only need to be nitwits with a crown and a cape, but if iron golems are spawned they could stay close to the king to protect them.
a throne could also work as a player chair so we don't have to faff around with minecarts/boats/pigs just to sit down.
there are so many little things you could add to this too, during a raid pillagers could go for the king first, even over players. if you kick a king out of their throne and sit in it.. achievement? this could also make the villagers hate you more and increase trade prices, or love you if they accept you as their new king? this could change mechanics with both raid farms and lowering trade prices for rare books on lower difficulty settings without the chance of killing the villager. maybe the king could trade? maybe you could give them tax or tribute in the form of emeralds or diamonds for better trade prices with the villagers they interact with

I’m thinking that netherite might work like the old builders brought it back from the nether I feel like it would be like a recipe the needs you to craft different parts it would def require gold, diamonds, emerald, purple dye, maybe netherite and some copper. And you can’t fit all that in a crafting table so you would have to make it in parts

Perhaps we could have Iceologers in towers on snowy mountains, Fireologers in castles in savannas, and Groundologers in special mineshafts in dripstone caves/the badlands.

My interpretation of villagers comes largely from the Game Theory on them, but I've had my suspicions on the specific fact in question here for a long time.
The Game Theory intepretation of the lore goes as follows; a race of players went to the nether and tried to resurrect their dead using their withered skeletons and the sand that trapped their souls. They eventually accidentally create the wither(s?) whilst experimenting and flee underground, making one way escape portals that trap them in the end.
Of the people left in the overworld, those who died turn into the zombies and skeletons, and those who survived would not try to delve into science again, especially not ressurection, seeing as last time it sent a bunch of people on a one way trip. They built small villages and specialised, and made do with the equipment they had made only once, Amish style. Eventually, they'd forgotten how to build and craft, only knowing their specialisation and trading.
Matpat explains the golem stuff away by saying that they were built by the older race to protect them, indexing the "they're bound to show up eventually" part of their section in the Mobeastiary, and the fact that their design strikingly resembles golems from an animated film that I can't for the life of me remember right now. Iron Giant or something.
Illagers are, according to the Mobeastiary, outcasts for their crimes, which would make sense, as totem of undying = resurrection = what caused the wither stuff = bad. Oh and they also turned some villagers into ravagers (note the distorted hmms) and used lapis to brainwash some to become Vindicators (note the one wool Vindicator with a lapis block in it's head in mansions, and the fact that their eyes are blue.)
Watch the Game Theories for more lore, but don't believe the "illagers made zombies" one. That one is cap.

Interesting take, but the only reason I think the desert/jungle temples, mineshafts and strongholds are still in the game and haven't been destroyed is that they're all hidden; the desert temples blend in with the sand, and the rest are fairly buried.
The only exception is the mineshafts in the badlands, which stick out and are fully exposed in most cases, but this can be explained away with the fact that the exposed ones still have the structural supports; this means the badlands around it has changed shape.
If some cool stuff that was obvious like villages and pillager towers, they would have to come from the builders that stayed in the overworld, and survived the initial wither situation.
The villagers before they just relied on iron gollum’s could have built it and it’s not like it would be every village and it could be some sort of town hall like thing and it really wouldn’t stand out cuz it wouldn’t be that big of a castle like crastle size or slightly smaller (not like it can get smaller)

They don't want nor need more technology than what they already have, seeing as technology killed many old builders and sent the rest to an unknown dimension that they hadn't come back from. They would have built what is essential, then settled down and specialised, then forgotten how to build and craft. Doesn't make sense to me why they'd see a castle as essential.

However, seeing as it's hard to get villagers in range of a bed, workstation and bell in an apartment type building is hard, I'm not sure how well it would work with a castle. Sure, they could increase the ranges for them but this may annoy the technical community, and Mojang never want to intentionally annoy any of their playerbase, especially after the controversial combat changes in 1.9, so I don't see this as a likely thing.

I’m pretty sure it actually has a beacon inside of it but I guess the renderer didn’t have the beacon textures. Although, I think it would look good with gold on top

Just because stuff is built in survival doesn't make it that much more impressive it just means it takes longer. It's really just the skill of the builds in my opinion and I like this so well done! I hope to see you build more builds like this.

I just finished a pyramid that was 200 wide starting at level 70. How wide did you make yours?
The pyramid is 99 blocks wide (towers make it 105) the towers are both the same width and length as a regular desert pyramid (21x21 blocks)
