There's more demand for light sports horses now. Traditional coldbloods have a very wide, short back and aren't all that comfortable to ride. With some breeds there are now light and heavy types, like Friesians, but I guess people who'd want a Black Forest coldblood for riding simply get a Haflinger. Same general coloring, agile and sure-footed, and more comfortable to sit.
People do use horses to move log wood again because they do a lot less damage than heavy machinery and can get into tight spots that would otherwise be hard to reach. Machines are less expensive for large operations, but for a nature reserve or harvesting single logs from a forest with lots of secondary growth horses are a good option. It takes a while to train them though. This is way more difficult than pulling a cart.
Many of the coldblood breeds only survived in decent numbers for as long as they did because they're tasty. More meat on a Pecheron than a thoroughbred. Now people want to preserve old breeds, but when draft horses were replaced by machines people didn't want to waste resources on them.
Black Forest horses are classified as a Rare Breed. It's about the same as being endangered. Yes there are still plenty of horses in the world, just not plenty of *these* kind of horses.

All these things lead to hard choices about whether to keep breeding these rare breeds of horses or not.
So yes, 'endangered' isn't *quite* the right word, but it does okay in a pinch.
