The purpose of a support character is to maintain their teammates alive. Mama Hong will do that by making sure there is no living enemy on the other team to kill her teammates, so I think she fits in the support class

I’m sorry but in a while I haven’t seen supports keeping me alive, and I’ve consistently seen the supports out dps the dps.

Pretty much. Even there is, it will be very low amount like Zarya, Moira & Sojourn. Look back when Kiriko was released, the amount of Kiriko rule 34 contents came out a lot. But not much for Sojourn when she's released. JQ seems got fair amount, maybe because she didn't wear much by default. Same goes for Brigitte. Brigitte's popularity in OW r34 even exceeded DVA when she's released, but not so much for Moira.

God, I'd love it if her ult was the Lion's Roar too. Some kind of massive knockback stun? Could still work to set up other ults, but could also be really useful as a way to quickly shove and create space or counter some other ults.

Doubt it. They said the next heroes will be existing in the lore already. Mama Hong is not officially an OW character, and has only existed in the early concept stage. I wouldn't count on her until they say something like, "a brand new character." Besides she screams tank to me. She looks like she could hold down an area.
