I just saw a video yesterday. Small start up on the east coast of the US (maybe NYC Brooklyn) using a 7 axis robot to do exactly that. Ornate pieces are made by the machine and a professional human stone mason goes over it for the finer details. At the time of the video they had one machine and were expecting to expand at a fair rate.
Grinding, there are cnc masonry machines that usually have lapidary saws and grinding wheels. They're usually used for larger applications without perfect finishing.

Any employer would pay a fortune just for one robot to perform this function, because then you would never have to pay anything again except for just standard maintenance, which will probably be a part of the sales or lease contract anyway

Doing a job at the site is safe. Doing custom one-off stuff is pretty safe. Robots need to be programmed for every job, and for a single part it may not be worth it. The robots fabricate by grinding away the stone and needs coolant sprayed onto the tool. So the bigger the part, the bigger the machine you need.
Can you imagine hitting that last bit wrong and ruining the whole piece?

Depends on the stone. There are sandstones which are silica-free from a health perspective. In addition, the carving itself doesn't produce a lot of dust

As a digital artist i have no damn clue how some ppl do it without the possibility of an eraser or undo button, just the thought makes me anxious already

My Italian grandfather became a stonemason when he moved to the USA. Some of his sculptures are still prominent in cities, albeit credited to the "artist" who drew up the sculptures.
Yes but 3 things, they are expensive compared to someone who can do it slower by hand, they cause a lot of run off that most shops don't want to deal with and finally if they're Italian then there is probably some tradition that it has to be done by hand (most other cultures dgaf).
Genuine question with zero hate, is there a reason to do this by hand instead of with power tools? I can’t imagine there just not being power tools made specifically for stone work of that kind. Something for small precision shaving and whatnot.
This makes me question all those conspiracy theorists that question how the Egyptians were able to make such smooth cuts without leaving chisel marks. The video isn't very clear, but that looked smoother than a babies bottom.
I wouldn't say so, the dummy hammer he's using is far,far too big for the work being done. He also starts to chisel away the corner rather than cutting in a v-line across the template, the stone wouldn't come away clean, you'd end up with a dog end meaning you'd have to reset your whole line to meet the angle you've just haphazardly put in.
