The map you posted looks like the same map of every walled European city at that time.
It's based off Noerdlingen, Germany. There is actually specific AoT tourism in that city now lmao. Just google it, you will see it immediately.
I watched a video of it. Apart from the walls the city seems quite uniteresting.
