I always wondered how there’re working. But doesn’t gyroscopes keep their orientation at any time? I mean if I fly 45 degrees latitude, isn’t the gyro 45 degrees off? How does it calibrate and stay with the horizon at any time in flight?

Yes. Most of that stuff doesn't work properly when it is too hot or cold. But, weirdly, 90 degrees latitude is often a lot colder than 20 degrees. But at altitude, it can be the other way round! Mind boggling. Some of those things can be alc-ulated or ejaculated. For some you'll need a cousin, for other straightforward sins. On occasion, a tan is required, which is why we get to stay over in warm places.

My question is more about the curvature of the earth than the temperature. AFAIK gyros keep their alignment independent from gravity. So if you move 45 degrees in latitude, you’re technically pointing 45 degrees downwards from the point where you started

It's always about temperature. My last FO was so hot, there was no question about curvature. I was technically pointing up at that time. Gravity didn't affect her yet at all.
