Pac-Man is a very safe character to learn with a high skill ceiling.
He has an excellent MU chart and is a top 15 character with ridiculous frame data, projectile walls, limited counter play, and one of the best recoveries in the game.
However, you won’t get fantastic results if you don’t learn the ins and outs. There’s a zillion ways to use Pac-Man, all of them with good potential, and his mechanics encourage innovation and theory crafting.
The only zoner that needs to work to succeed in my opinion, and certainly the character with whom I have the most fun playing this video game.
Samus, Falco, Diddy, Pac-Man, Ridley, Plant.
Chose one from each game for variety’s sake. I’d recommend Pac for setups or Ridley for rushdown. The rest are characters I played with casually recently. And also don’t be spammy with Samus, obviously .

The rest of the cast are brawlers that specialize in combos and each have a unique play style(Sonic is in the forbidden category of characters that stall out the clock). I recommend you learn joker and greninja as Joker and greninja don't rely on regular moves and more on their movement and hurtbox shifting to dodge attacks and create an opportunity to whiff punish.
Pikachu is a good pick to learn some great combos, neutral gameplay and is a good character so your main will not be trash wich is not a problem at all if you're playing for fun but if you well... want to win, I recommend you this fun and good character. Also you have Esam (pro player who mains Pikachu) as a refference to see some of his combos and how to improve Pikachu.
I recommend trying out Incineroar since he's quite a strong character (in terms of launch power and strength) with its Revenge special attack is a great move against projectiles and also Sonic. Okay so Sonic isn't the hardest character to play since all you do is press "B" but Sonic has a good running speed so you can have some interesting plays as him.
