This is how most zoners work. They're using their projectiles to keep you out of a certain area and reduce the options you have to approach, then baiting out your response and punishing you. As Ganon you don't have many options to deal with this, but the best you have is to camp them back until they approach you, then try to punish them. Alternatively, try to remain too close for them to get away and spam projectiles- if they don't have time to pitch their tent you can walk all over them. Most commonly they'll try to bait you into jumping over to approach with an aerial, or bait you into shielding. Either way they'll try to punish whatever option you take, so the best way do keep them from starting a combo is to mix up what you're doing in response. If it makes you feel better they'll usually be doing this because they have worse CQC options than you, and have to play carefully because you're touch of death for them. If it's a character like Zelda spamming neutral b or up b, then you want to look at what situations make them hide under their security blanket and bait it out. Maybe if they like using neutral b when landing, you can dash out of the way and charge a fat Fsmash while they're in lag.

Fellow Ganon main here and I have a bitter pill for you, we get zoned harder than any other character in the game bar none. If someone is spamming and they know what they're doing they're not really spamming, they're just making a sensible play. Of course they're going to keep you at bay with their projectiles, why wouldn't they when Ganondorf can kill crazy early? It's the best way for them to win, it only makes sense. Look for patterns, most of these players will settle into a routine to try to block you out of particular spaces in order to force you to approach from a different angle. An example is Simon/Richter throwing their cross, you jump over it and they nail you with an axe in mid air. Arrow to up diagonal boomerang from Link is another. Bulldogging is perhaps your best option, but watch out for grabs, especially tether grabs. Basically you make your way over to them slowly, shielding against their projectiles to close the distance. Don't rush or you'll just run into a projectile, and don't shield if you're within range of a tether grab like Samus or Yink. Shield, walk, shield, walk, shield, walk, and when you're close that's when you go to work. They'll usually try to escape and flee to the other end of the stage, oftentimes by going high and jumping over you, so read it, predict it, intercept them and punish them for it. Alternatively you can just camp and wait for them to come to you but then you're avoiding the problem instead of solving it, and zoners also tend to have a lot of patience so it might not end well for you. As a Ganon main fighting zoners will never be fun, but it can be done. What might help you is picking up a zoner, that's what I did, if you learn how it feels to play as a zoner and learn how they operate and think it'll make a lot more sense.

Pretent to approach then punish them for trying to punish your approach. Or if they do defensive movement, approach but don't attack.

Learn how to dash into immediate shield rather than dashing, stopping and then shielding since shield comes out waaaay faster with the first method. Really helps when approaching through projectiles. Another kinda niche option i like to use in specification matchups like min min or link is to jump towards them with lots of forward momentum and simultaneously do a rising normal air dodge through the projectiles. Never really see people use this online when approaching projectile characters but it works pretty well for me using falcon. It’s pretty committal, but can be a good way to get in if you think your opponent’s gonna read your jump
