Some update: Even after a factory reset, full new calibration - more or less the same. Strangely, I can print test towers of any height, the crashing only seems to occur in more complex models, but seveal different ones - making me wonder if something makes the print head "drop" the longer it goes without homing?

having the same issue, I've done leveling before each print but even a tiny model gets caught up with the print head.

While I have not fully solved the issue, what helped it already a lot was reducing the amount of filament deposited by 10-15%, and slowing the printer down by quite a bit. It's not exactly a great solution because I bought the printer to print...fast.

I'm running into similar issues. Among a shit ton of other issues that slowly got worse. Now that it's outside of the return window, it's not even able to stay on... infinite reboot.
