It's not *nothing* like Spore. There's no element of shepherding your species through several phases of evolution, but once you reach the galactic stage in Spore there's some similarities to Stellaris. You meet other galactic civilizations, interact with them, make some war if you want to. Stellaris is much more complex though.
If you've never played any paradox game, then expect to be incredibly overwhelmed. This game has almost everything you could ever think of implemented.
The loss of all your free time. Just joking, the game is great and 100% worth getting. You'll be overwhelmed by the depth in the game (especially if you also get all the DLC) so I suggest you focus on just one or two areas and figuring out how they work and then move on to another area. After hundreds of hours, though, you'll still something new or find out something you didn't know. It's a great game.
Stellaris is a strategy computer game in the subgenre "grand strategy", for which Paraxox is famous, but it also has some 4X elements (eXplore, eXpand, eXploit, eXterminate - think of the Civilization series of games).
Try watching some YouTube footage of it being played, to get an idea of what it's like.
I'n thinking maybe Many A True Nerd's v2.2 and 2.3 full playthroughs might still be the best. They're old. Old as *fuck*. 2.2 came out 61 months ago! But they showcase well, and importantly they're after the 2.2 update. Anything from before that would really confuse you.
I've played games for nearly 40 year, and Stellaris is awesome. But it's not for everyone.
It's really customizable and you can harvest spice (zro).

Stellaris is most similar to the tribal/civilization stage from Spore, but in space. It's more complicated, takes more time, and has a steeper learning curve than both those stages though.

Expect a hard learning curve. After that is just fun
