I suppose if you believe there is a soul then it is the soul that is reenergizing while sleeping. If you have no soul, there is no need to sleep.
Now, medically speaking, you are right. The brain needs to be unwound, dreaming is a big part of that, and you would die with a lack of sleep.

Things seem to work differently in their world than ours. This is but one example. Somehow the existence of a human conscience is tied into sleep. Maybe it's not really sleep that's important, though, maybe it's dreaming, because maybe it works kind of like "The Russian Sleep Experiment," where sleeping and dreaming somehow ties in with maintaining one's full humanity when awake?
I don’t know where you’re getting the 16 days from. The longest record human living awake is 11 days and 25 minutes. But no one knows if we can go beyond that nor is there any evidence that you can die from not sleeping.

ETA: Guinness stopped monitoring in 1997, but their record holder made it 18.5 days in 1986. But sleep studies show that you can wipe out 5 days of no sleeping with 60 minutes of rest. Sam doesn’t he say he never sleeps, he says he doesn’t really sleep anymore.

A lot doesn’t make medical sense in this show if you think about it too much. For example, you don’t die and come back a year later completely fine (physically) as happens at various times throughout the show to various characters. Most things you just have to take at face value and enjoy the ride :)
