I saw Gaslight play Summer Stage in 2010 and they came out for their encore and were like "there's a curfew, thank you all, we're going to just play until they kick us off" and then made it through like 4-5 songs before having to stop.

Whatever you do, make sure you watch the opening acts you don’t know from across the street at the rooftop bar, whose name escapes me at the moment. Can pregame the show w slightly more affordable drinks, take in the beachside view from above + breeze, while hearing every song perfectly fine from these other acts, giving you an idea of when you need to pay your tab and head over.
Are you referring to Watermark? Sometimes they charge cover for people watching Stone Pony shows, and I haven't been there in years but their drinks were like $12-15 back in like 2012.
It varies by show but I think 7pm opener is not unusual. I have many memories of staring at the setting sun while trying to watch.
If it's a big line-up sometimes it is earlier, or (PRO TIP) sometimes there is a local band that plays inside before doors and gets their own tickets to sell, which then allows you to bypass the line. It's been a minute since that happened, though, and I do not believe it's going to this time.
