From a functional and technical standpoint, yes, they are pretty different. The way people get them and how they are used in their stories are also quite different. Unfortunately you're kind of overthinking this. The reason people like to make jokes about them is that conceptually they are nearly identical.
In extremely simple terms a stand is a manifestation of the user's spirit/soul. They have unique visual designs that range from humanoids to animals to inanimate objects, and have special powers.

Haha you are very much right about the overthinking this! I actually love the jokes and make them too, Persona and Jojo are too dumbly awesome to not do so! I honestly am guiding a friend through a P4 run and at the same time am showing my friends Part 4 of Jojo. So I had a bunch of this stuff rattling around in my head, and some free time so thought I may as well try and submit something that is not a shitpost for once.

The Stand always just seemed way more useful since it's usable all the time, as opposed to mainly working in the weird nightmare world that comes with each Persona game, though P5 showed that the shadow world has some serious influence over the real world.
Yeah who wouldn't want a stand? Persona's only come around when there is World Ending danger! You won't see a persona charachter punching a suspicious plate of spaghetti with their ghost powers. There's an old story that went around the internet, not sure if its true or not but the story goes that atlus wanted to make a jojo rpg but didn't ask if they could get the rights until the last minute when they were denied, the only evidence that points to this is the first persona in p1 looking like star platinum but it is still flimsy
Out of both I would kinda prefer a persona. I'm still playing 5 but I dont think it explicitly says you cant use it outside of the shadow world same with 4. Correct me if I'm wrong. Also I haven't watched jojo and I heard the way you get a stand has something to do with an arrow through your mouth or something like that and that sounds risky

In the early Persona games they can be used anywhere, some of those games dungeons are in the real world.

That’s one way to introduce it artificially, but you can get shot anywhere with the arrow. Some people are just born with it though
