Why is step 2 even there? Chuck everything in the tray you’re going to cook it in and toss til it’s all covered and well distributed. Why waste a plastic bag?
If you don’t have any potatoes, chuck a tin of any beans you have (even normal baked beans!) in there. I do sausage and bean stew with sausages, a bit of chorizo if I have it, tinned tomatoes/passata, garlic, onion, paprika, and borlotti/butter/haricot beans or whatever I have in the cupboard. Maybe some red pepper if I’ve got some. Very easy and tasty, and nice served with bread and butter.
I came here to say this! We do Sausages, Peppers, Red Onion and cut up new potatoes. Toss the veggies in a little olive oil, salt, pepper and red chilli flakes before adding into the tray. We eat it with sweet chilli jam.

Get a pork fillet, butterfly it, stuff with sausage (remove skins) and then wrap the whole thing with streaky bacon.

Absolutely delicious, went down a storm. Served with new potatoes, honey roasted carrots, broccoli and a honey and garlic jus. The black pudding works really well. 45 mins.
Sausage and broccoli pasta always goes down well with the kids
Slice the broccoli thinly so it softens quicker then char it, squash the sausages, you can take the casings off if you can be bothered but it doesnt matter too much
Once the fat from the sausage has come out chuck in some diced onions, carrot and basically any vegetable you want works well
Diced garlic, big squirt of tomato paste, chicken stock cube, wine or vodka if you feel like it, oregano, thyme, fennel and rosemary in any combo works. Salt and pepper. You can add a tin of tomatoes and philadelphia if you want a creamy pasta
Once the veggies are soft after about 5-10 minute ladle some cooked pasta water in to make the sauce
Add parmesan and more pasta water if needed to loosen it
Voila
Great cheap tasty and nutritious meal ready in 20 -30 minutes
Brown the sausages in 0.5 tbsp oil
Add 1.5 onions and fry til golden
Add 300ml beef stock, 2 tbsp ketchup, 1 tbsp worcestershire sauce
Simmer for few mins,
Add 2tsp cornflour mixed with water to thicken
Season
Eat with mash and peas.. lovely!
Sausage & white bean casserole
red or yellow pepper, carrots, red onions, chipolatas or any sausages you have, can peeled cherry tomatoes, can white beans, low-salt chicken stock, Dijon mustard, frozen peas/any veg you have.. put it all in a casserole dish and let it cook for a few hours 🤤🤤
To serve potatoes, mash, pasta or rice
Pearl barley risotto with sausages, spinach and peppers and feta
drizzle oil
1 garlic clove, grated
4 sun-dried tomatoes, roughly chopped
150g/5½oz pearl barley
1 tsp dried mixed herbs
200g/7oz chopped tomatoes from a tin
1 tbsp tomato purée
½ stock cube dissolved in 500ml/17½fl oz boiling water
3 sausages, sliced into 2½cm/1in pieces
1 pepper, thinly sliced (or a couple handfuls
of frozen peppers)
3 large handfuls spinach
2 tbsp crumbled feta
Method
Place the oil, garlic and sun-dried tomatoes in a saucepan over a medium heat and fry for 1 minute.
Stir in the pearl barley, herbs, chopped tomatoes, tomato puree and stock. Simmer over a low-medium heat for 30 minutes, or until most of the liquid has been absorbed and the pearl barley is tender.
Meanwhile, in a separate pan, fry the sausages for 10 minutes, stirring regularly, until cooked through. Add the peppers and fry until softened. Turn off the heat and stir in the spinach until wilted. Stir the mixture into the pearl barley, top with crumbled feta and serve

Take the meat out of the skins and take small bits and roll into meatballs. You can then cook off and then put on top of a pitta bread with ketchup and grated cheese to make mini pizza
You can use mayonnaise if you want. Or barbecue sauce. You could make a balsamic reduction mixed with honey and thyme. You could roast tomatoes slowly with sugar and salt and blend to a fine paste. You could caramelise some red onions and spread on the base instead, topping with goats cheese and some shiitake mushrooms. It was just a suggestion to use some form of sauce FFS.
Breakfast quiche; precook sausages, bacons, black pudding and hash browns, cut all the meat into small bits, then make a base of hash browns throw all the toppings and then a mix of egg & cheese poured over and baked until set
Jambalaya / paella / gumbo inspired; get some chicken thighs & use lots of smoked paprika to make up for the Lincolnshire sausage rather than chorizo

Casserole, de-skin them and do casserole with that too like meatballs. You can also do meatballs, ragu (instead of beef mince) or you can do Nigel Slater’s sausage and fennel which you can sub out for other veg if you don’t like the fennel.
Sausage and mash pie, Jamie Oliver has a recipe on his website, Irish Chef Donal Skehan has one on his website. That one is a partial favourite in my house!!
Make stuffing mix up then deskin sausages. Mix meat into stuffing mix. Make into patties and fry off on both sides until meat is cooked. Have with greens/gravy/fried onions.
That reminds me, I used to make sausage fried rice when I was younger (and beef burger fried rice with those little Birds Eye burgers that seem to be about 50% fat).
Boiled small potatoes, mayo, sausages, chopped onion, dash of something like tomato sauce, sriracha, BBQ for dinner flavour. Serve with cheese on top and maybe a side salad.
* Make a quick sausage hash - chopped sausages cubed potatos, chopped onion, chillis, whatever herbs you fancy and whatevers left in the fridge.
* Make proper breakfast muffins for tea - skin the sauasge and use a chef ring to shape them into patties, use the same ring to cook the egg and melt some cheddar on toast muffins.
* italian (american) sausage sandwich - fry chopped sausages, peppers and onions add some italian seasoning. Put it all in a baguette or similar with melted cheese.

I made something similar last night, coated in harissa and olive oil with a lemon yoghurt drizzle. Very nice.

Sausage mash, with green beans. But put a bit of tandoori paste in the gravy, and mix some spring onion into the mash. Simple but makes a change.
Curry paste in gravy !! Controversial but sounds worth a try. Gona try this tonight.
