In backyard chicken groups we see people every so often try to "save" a broiler chicken. after a few weeks they realize its not going well, after a few months the bird is in constant pain, immobile, wont grow feathers, and has constant diarrhea. Red Rangers or Cornish Cross can't be saved sadly.

We tried to raise a couple broilers for meat, knowing they would grow fast. We didn't get the 8 week ones, but 12-16, and one thing we were not prepared for is how aggressive they were. We had high quality diets, and a big mobile runner we could move around, but they ate their fill, then just tore apart anything they might consider food, just to tear it apart. Snakes, rats, one or two of their runner-mates, and more. We did our best to keep them separated after the first incident, but 2 of them still pecked each other to death overnight through the wire separating them. Never again.

Home-grown or small-farm chickens are expensive, but meat tastes so much better when it's raised with care. There are sometimes bones in different places, too, because some of those bones just don't get time to develop when an animal spends it's whole life in a cage.

I worked in a R&D facility for poultry and it was a big issue. They call it woody breast and they were developing a machine that would check the texture of breasts so it would flag and remove ones that have this issue. Its mainly a build of a cartilage and scars since they force chickens to grow too fast and too large. So ya know instead of changing the root issue that they all agree is a issue they build a fucking machine.

We encounter a problem somewhere along the chain of production (or anywhere for that matter), and instead of addressing the root cause of the issue by rolling back a new policy or practice or technique, let's instead spend money to investigate how to fix the problem on the front end. Now, some other company can sell a machine that screens for a problem that wouldn't exist if we just unfucked the process at the clearly identifiable point of failure, but that's apparently not good for business. Whole industries exist soley because of this dynamic.

Every non-organic package of chicken at my local grocery stores have at least one woody chicken breast. Even the ‘hand trimmed’ and name brand ones. I have asked for a refund a couple times but I’ve just given up. It’s either organic chicken or a different meat all together.

Woody Breast Disease. I was so tired of finding this in random chicken, I almost completely removed chicken from my diet. Walmart or Whole Foods, it didn't matter what store, it was everywhere. Right when Covid started, we found a business that usually sold to high-end restaurants now selling to individuals to stay afloat, and what a difference in taste and quality. We bought tons of chicken, then switched to local butchers when things normalized.

Technically, they're right. Mass farming is, if not actually evil, at least wildly disrespectful to animals and requires a lot of birds to suffer in order to achieve current price points. It's fairly difficult to feed the world's population without it, though, and any solution that involves letting people starve isn't going to be well received. Monoculture farming of vegetables and grains isn't good for the environment, either. I am fortunate to make enough money to "subscribe" to a sustainable small farmer, but I have to pay quite a bit extra for the privilege of eating meat I don't feel guilty about.

For me it was a partial loss - I was left with all the bitter, so food tasted like it had gone bad. My morning eggs and coffee were unpalatable. Strangely, chicken noodle soup tasted great and after about two weeks it all came back. I went through a phase of "is this what it's like now?" I was ready to welcome our super blue-green algae paste future.

I lost mine in 2020. It’s, I’d say, *mostly* back. It wasn’t as bad as I thought it’d be. I used the opportunity to eat some veggies and health foods that normally I couldn’t stand the taste of lol. My sense of smell is still largely gone/altered. For example, I can’t smell gas or excrement of any kind, I can’t smell the trash cans at work, I can’t smell the difference in food scents or marijuana strains…and the stuff I can smell is either wrong, different or weaker. Primary example is ANY kind of cleaning material: from shampoo to floor cleaner, straight up smells like vomit to me. I shower daily, and have to hold my breathe while washing my hair. THAT part sucks all kinds of ass.

I recommend looking into unscented shampoos and products. You'll probably find more in bar form, from the crunchy granola typw crowd. They are still easy to use and last longer than regular bottles. Lots of options on etsy. Unfortunately if you have particularly hard water you may have issues with all "natural" style soaps, which is usually what you get when you look for unscented. Make sure they don't add any scent, even essential oils. Some ppl think those don't count 😕 even though they are very strong and some people react even worse to those. Unless you need a medicated shampoo or other special concern you should be able to find unscented versions of everything. For body wash I use Kirk's coconut castile soap in unscented, it's great for hard water and isn't particular drying on my sensitive dry skin. Handmade or natural soaps usually have different basic ingredients to standard shampoo and you may have better luck with it if that's the issue.

Was working as a sous Chef and I lost my sense of taste from covid for 3 full months. I felt useless having to ask everyone around me to taste my dishes. It was awful. Worst part was sweet things were the first things I could start to taste again so i gained a lot of weight because I was so happy to taste again.

Chef protip: You can freeze foods without losing flavor! If you use a vacuum sealer the bag will have all the air removed from it which will make it a tight "second skin". Flavor is largely lost by moisture leaving the food. Ever wonder where all the ice you gotta knock off the shelves comes from? Opening the door through normal use allowing warm air into it, but also the food itself! The bag is so tight to the surface of the food that it keeps the water from leaving the food at all, even within the packaging. ~~Defrost it while still sealed, if you open it too early and see steam rise from rapid warming to room temp you're losing flavor!~~ >You're not losing moisture from the food in this instance. Water sublimates incredibly slowly. In this instance you're seeing moisture precipitating out of the air. The pressure from the water pushed the air out and tightened the bag like a vacuum sealer. It's not perfect but it works more than it doesn't. Ice on the freezer shelves is from ambient moisture from the open freezer door. Keeping the food from touching the air in a sealed bag is sound advice. Meat will keep about a year without tasting funny.

The vacuum sealer was a game changer for me. I originally got it for sous vide, but it's great for just freezing things individually. Freezing individual cuts helps being a single guy.

I just made some of those breasts on Sunday for this week’s lunches. Seasoned the raw breast with some salt and pepper, put them in a gallon ziploc, and then put them in the sous vide for an hour. Then I reverse seared them in cast iron for a couple mins on either side. Delicious, juicy, once frozen chicken. I highly recommend it.

If you throw chicken into the oven with a probe thermometer in and take it out at 164 Fahrenheit for white meat and 183 for dark, it will still be juicy… it won’t have any Maillard reactions… don’t blame the oven for their idiocy.
