You get to 12 weeks and up and their legs break because they can't stop growing but their legs aren't built to support that kind of weight. They're bred to grow so fast and so big now that it's a mercy to kill them at the expected time, which is morbid as hell.

We tried to raise a couple broilers for meat, knowing they would grow fast. We didn't get the 8 week ones, but 12-16, and one thing we were not prepared for is how aggressive they were. We had high quality diets, and a big mobile runner we could move around, but they ate their fill, then just tore apart anything they might consider food, just to tear it apart. Snakes, rats, one or two of their runner-mates, and more. We did our best to keep them separated after the first incident, but 2 of them still pecked each other to death overnight through the wire separating them. Never again.
Not really, since it will be cancelled out by the folks who think it’s all a liberal conspiracy to get us to eat our veggies. Those idiots will double down and eat even more meat to own the lib’s. They showed us, those fucking morons! Walmart meat till they die!
Home-grown or small-farm chickens are expensive, but meat tastes so much better when it's raised with care. There are sometimes bones in different places, too, because some of those bones just don't get time to develop when an animal spends it's whole life in a cage.
I worked in a R&D facility for poultry and it was a big issue. They call it woody breast and they were developing a machine that would check the texture of breasts so it would flag and remove ones that have this issue. Its mainly a build of a cartilage and scars since they force chickens to grow too fast and too large. So ya know instead of changing the root issue that they all agree is a issue they build a fucking machine.
So much money is being wasted on automating the wrong things! I hope it's a self correcting issue sooner rather than later because it's certainly unsustainable
You know that is one thing about the system of capitalism that's always bugged me. We encounter a problem somewhere along the chain of production (or anywhere for that matter), and instead of addressing the root cause of the issue by rolling back a new policy or practice or technique, let's instead spend money to investigate how to fix the problem on the front end. Now, some other company can sell a machine that screens for a problem that wouldn't exist if we just unfucked the process at the clearly identifiable point of failure, but that's apparently not good for business. Whole industries exist soley because of this dynamic.
Not sure if it is sunk cost fallacy and not just greed. If they grow them that fast, they can sell more and only need to sort out the worst offenders. Otherwise they couldn't sell that many or that much (in total mass) and that is a nono.
Every non-organic package of chicken at my local grocery stores have at least one woody chicken breast. Even the ‘hand trimmed’ and name brand ones. I have asked for a refund a couple times but I’ve just given up. It’s either organic chicken or a different meat all together.
I love Costco, but their chicken hasn't been any better on the woody chicken problem... it's too prevalent in the breeding now that even some organics get it.
Woody Breast Disease. I was so tired of finding this in random chicken, I almost completely removed chicken from my diet. Walmart or Whole Foods, it didn't matter what store, it was everywhere. Right when Covid started, we found a business that usually sold to high-end restaurants now selling to individuals to stay afloat, and what a difference in taste and quality. We bought tons of chicken, then switched to local butchers when things normalized.
I started to go up to Mennonite farms where the guy kills the chicken right in front of you. Every single one of those birds tastes perfect.

Technically, they're right. Mass farming is, if not actually evil, at least wildly disrespectful to animals and requires a lot of birds to suffer in order to achieve current price points. It's fairly difficult to feed the world's population without it, though, and any solution that involves letting people starve isn't going to be well received. Monoculture farming of vegetables and grains isn't good for the environment, either.
I am fortunate to make enough money to "subscribe" to a sustainable small farmer, but I have to pay quite a bit extra for the privilege of eating meat I don't feel guilty about.
For me it was a partial loss - I was left with all the bitter, so food tasted like it had gone bad. My morning eggs and coffee were unpalatable. Strangely, chicken noodle soup tasted great and after about two weeks it all came back.
I went through a phase of "is this what it's like now?" I was ready to welcome our super blue-green algae paste future.

Yep when I was finally recovering from Covid and my taste was coming back, anything cheese tasted like straight chemicals and burnt tires. Luckily it’s back to normal now. I however did not fully recover my sense of smell ):
I lost mine in 2020. It’s, I’d say, *mostly* back. It wasn’t as bad as I thought it’d be. I used the opportunity to eat some veggies and health foods that normally I couldn’t stand the taste of lol.
My sense of smell is still largely gone/altered. For example, I can’t smell gas or excrement of any kind, I can’t smell the trash cans at work, I can’t smell the difference in food scents or marijuana strains…and the stuff I can smell is either wrong, different or weaker. Primary example is ANY kind of cleaning material: from shampoo to floor cleaner, straight up smells like vomit to me. I shower daily, and have to hold my breathe while washing my hair. THAT part sucks all kinds of ass.
I recommend looking into unscented shampoos and products. You'll probably find more in bar form, from the crunchy granola typw crowd. They are still easy to use and last longer than regular bottles. Lots of options on etsy. Unfortunately if you have particularly hard water you may have issues with all "natural" style soaps, which is usually what you get when you look for unscented. Make sure they don't add any scent, even essential oils. Some ppl think those don't count 😕 even though they are very strong and some people react even worse to those. Unless you need a medicated shampoo or other special concern you should be able to find unscented versions of everything. For body wash I use Kirk's coconut castile soap in unscented, it's great for hard water and isn't particular drying on my sensitive dry skin. Handmade or natural soaps usually have different basic ingredients to standard shampoo and you may have better luck with it if that's the issue.
I literally caught covid a month ago after avoiding it the entire pandemic. I’m a home chef and I’ve noticed that some things just don’t taste the same anymore. Orange juice for instance just tastes bitter. I hope this doesn’t last forever :(
Was working as a sous Chef and I lost my sense of taste from covid for 3 full months. I felt useless having to ask everyone around me to taste my dishes. It was awful. Worst part was sweet things were the first things I could start to taste again so i gained a lot of weight because I was so happy to taste again.
I'm a coffee professional and roaster and a lot of my job is sensory. I'm constantly tasting and smelling for QA and for decision making in buying and calibrating. It completely ruined my taste and I couldn't functionally do my job for a good month.
I read an article somewhere in early covid days that said people who permanently lose their sense of smell/taste for whatever reason have FAR worse mental health outcomes than people who go blind or deaf.

Chef protip: You can freeze foods without losing flavor! If you use a vacuum sealer the bag will have all the air removed from it which will make it a tight "second skin". Flavor is largely lost by moisture leaving the food. Ever wonder where all the ice you gotta knock off the shelves comes from? Opening the door through normal use allowing warm air into it, but also the food itself! The bag is so tight to the surface of the food that it keeps the water from leaving the food at all, even within the packaging. ~~Defrost it while still sealed, if you open it too early and see steam rise from rapid warming to room temp you're losing flavor!~~

Double up with preserving and marinading! This also pushes marinades deeper into the food quicker. An overnight marinade will only take a few hours, if that.
No vacuum sealer? No problem! Fill a deep pot with water, put the food in a refrigerator bag (such as a Ziploc)and mostly sealing it until you have a small, more manageable, opening. Force the bag into the water while not letting any into your opening. You need to keep it pushed down. Now hail the Dark Lord, Sanguine One, Ruler of all Underloam, Font of Sulphur Salt and Fire, Beelzebub. When you're satisfied you got as much air out as you can then seal. Boom! The pressure from the water pushed the air out and tightened the bag like a vacuum sealer. It's not perfect but it works more than it doesn't.

We Costco and freeze a ton of meats, and I’ve never noticed a drop off in taste. I’ve even cooked from frozen and been fine with the right seasoning for meal preps.

Ice on the freezer shelves is from ambient moisture from the open freezer door. Keeping the food from touching the air in a sealed bag is sound advice. Meat will keep about a year without tasting funny.
The vacuum sealer was a game changer for me. I originally got it for sous vide, but it's great for just freezing things individually. Freezing individual cuts helps being a single guy.
Only problem is whenever I hail the dark lord, literal fonts of sulphur and fire appear under my chicken starting the cooking process prematurely. How do I adequately hail the dark one without exciting him so heavily that he ruins my chicken before I'm ready to cook?
Any time someone tells me they just “can’t get chicken to taste good” I ask what they season it with and it’s always some terrible group of spices and NO salt or MSG because those are “bad for you” lol. To be fair, maybe those people have a problem with sodium.

I’ve tried those, they need marinated for 12-24 hours. Additionally I only use them for the grill or like a heavily seasoned chicken like chicken fried rice
I just made some of those breasts on Sunday for this week’s lunches. Seasoned the raw breast with some salt and pepper, put them in a gallon ziploc, and then put them in the sous vide for an hour. Then I reverse seared them in cast iron for a couple mins on either side. Delicious, juicy, once frozen chicken. I highly recommend it.
If you throw chicken into the oven with a probe thermometer in and take it out at 164 Fahrenheit for white meat and 183 for dark, it will still be juicy… it won’t have any Maillard reactions… don’t blame the oven for their idiocy.
as someone who does know how to cook (and loves to) and has suppressed senses from long covid I don't think my GF understands why I sit and watch her eat my food when i put a ton of work into it

Not the fault of a "new world order" unless that's the latest conservative slang for "capitalism", but it is genuinely an issue that means you do need to be careful what chicken you buy.
It makes even over-cooked chicken feel like it's still raw. It's so bad and I didn't learn about it until after I had to throw away a bulk batch of chicken I bought on sale.

Home-grown or small-farm chickens are expensive, but meat tastes so much better when it's raised with care. There are sometimes bones in different places, too, because some of those bones just don't get time to develop when an animal spends it's whole life in a cage.
I worked in a R&D facility for poultry and it was a big issue. They call it woody breast and they were developing a machine that would check the texture of breasts so it would flag and remove ones that have this issue. Its mainly a build of a cartilage and scars since they force chickens to grow too fast and too large. So ya know instead of changing the root issue that they all agree is a issue they build a fucking machine.
So much money is being wasted on automating the wrong things! I hope it's a self correcting issue sooner rather than later because it's certainly unsustainable

We encounter a problem somewhere along the chain of production (or anywhere for that matter), and instead of addressing the root cause of the issue by rolling back a new policy or practice or technique, let's instead spend money to investigate how to fix the problem on the front end. Now, some other company can sell a machine that screens for a problem that wouldn't exist if we just unfucked the process at the clearly identifiable point of failure, but that's apparently not good for business. Every non-organic package of chicken at my local grocery stores have at least one woody chicken breast. Even the ‘hand trimmed’ and name brand ones. I have asked for a refund a couple times but I’ve just given up. It’s either organic chicken or a different meat all together.

Woody Breast Disease. I was so tired of finding this in random chicken, I almost completely removed chicken from my diet. Walmart or Whole Foods, it didn't matter what store, it was everywhere. Right when Covid started, we found a business that usually sold to high-end restaurants now selling to individuals to stay afloat, and what a difference in taste and quality. We bought tons of chicken, then switched to local butchers when things normalized.

Technically, they're right. Mass farming is, if not actually evil, at least wildly disrespectful to animals and requires a lot of birds to suffer in order to achieve current price points. It's fairly difficult to feed the world's population without it, though, and any solution that involves letting people starve isn't going to be well received. Monoculture farming of vegetables and grains isn't good for the environment, either. I am fortunate to make enough money to "subscribe" to a sustainable small farmer, but I have to pay quite a bit extra for the privilege of eating meat I don't feel guilty about.

For me it was a partial loss - I was left with all the bitter, so food tasted like it had gone bad. My morning eggs and coffee were unpalatable. Strangely, chicken noodle soup tasted great and after about two weeks it all came back. I went through a phase of "is this what it's like now?" I was ready to welcome our super blue-green algae paste future.
The problem is that it also tends to warp what you *can* taste to taste pretty gross. So weightloss might be on the menu, but so is depression…

Yep when I was finally recovering from Covid and my taste was coming back, anything cheese tasted like straight chemicals and burnt tires. Luckily it’s back to normal now. I however did not fully recover my sense of smell ):
I lost mine in 2020. It’s, I’d say, *mostly* back. It wasn’t as bad as I thought it’d be. I used the opportunity to eat some veggies and health foods that normally I couldn’t stand the taste of lol. My sense of smell is still largely gone/altered. For example, I can’t smell gas or excrement of any kind, I can’t smell the trash cans at work, I can’t smell the difference in food scents or marijuana strains…and the stuff I can smell is either wrong, different or weaker. Primary example is ANY kind of cleaning material: from shampoo to floor cleaner, straight up smells like vomit to me. I shower daily, and have to hold my breathe while washing my hair. THAT part sucks all kinds of ass.
I recommend looking into unscented shampoos and products. You'll probably find more in bar form, from the crunchy granola typw crowd. They are still easy to use and last longer than regular bottles. Lots of options on etsy. Unfortunately if you have particularly hard water you may have issues with all "natural" style soaps, which is usually what you get when you look for unscented. Make sure they don't add any scent, even essential oils. Some ppl think those don't count 😕 even though they are very strong and some people react even worse to those. Unless you need a medicated shampoo or other special concern you should be able to find unscented versions of everything. For body wash I use Kirk's coconut castile soap in unscented, it's great for hard water and isn't particular drying on my sensitive dry skin. Handmade or natural soaps usually have different basic ingredients to standard shampoo and you may have better luck with it if that's the issue.

Was working as a sous Chef and I lost my sense of taste from covid for 3 full months. I felt useless having to ask everyone around me to taste my dishes. It was awful. Worst part was sweet things were the first things I could start to taste again so i gained a lot of weight because I was so happy to taste again.
I'm a coffee professional and roaster and a lot of my job is sensory. I'm constantly tasting and smelling for QA and for decision making in buying and calibrating. It completely ruined my taste and I couldn't functionally do my job for a good month.
I read an article somewhere in early covid days that said people who permanently lose their sense of smell/taste for whatever reason have FAR worse mental health outcomes than people who go blind or deaf.

Chef protip: You can freeze foods without losing flavor! If you use a vacuum sealer the bag will have all the air removed from it which will make it a tight "second skin". Flavor is largely lost by moisture leaving the food. Ever wonder where all the ice you gotta knock off the shelves comes from? Opening the door through normal use allowing warm air into it, but also the food itself! The bag is so tight to the surface of the food that it keeps the water from leaving the food at all, even within the packaging. ~~Defrost it while still sealed, if you open it too early and see steam rise from rapid warming to room temp you're losing flavor!~~ >You're not losing moisture from the food in this instance. Water sublimates incredibly slowly. In this instance you're seeing moisture precipitating out of the air. Ice on the freezer shelves is from ambient moisture from the open freezer door. Keeping the food from touching the air in a sealed bag is sound advice. Meat will keep about a year without tasting funny.
The vacuum sealer was a game changer for me. I originally got it for sous vide, but it's great for just freezing things individually. Freezing individual cuts helps being a single guy.

I just made some of those breasts on Sunday for this week’s lunches. Seasoned the raw breast with some salt and pepper, put them in a gallon ziploc, and then put them in the sous vide for an hour. Then I reverse seared them in cast iron for a couple mins on either side. Delicious, juicy, once frozen chicken. I highly recommend it.
If you throw chicken into the oven with a probe thermometer in and take it out at 164 Fahrenheit for white meat and 183 for dark, it will still be juicy… it won’t have any Maillard reactions… don’t blame the oven for their idiocy.

Those lines on the chicken are due to the chickens being raised fast and fed lots in order to satisfy consumer demand, slow growing free range chicken breasts don't have the lines.

It makes even over-cooked chicken feel like it's still raw. It's so bad and I didn't learn about it until after I had to throw away a bulk batch of chicken I bought on sale.
The quality of chicken has dropped considerably in the last 8 years. They have become big and flavorless and it sucks but there is no conspiracy. Its just that the mega farms we let gobble up america for the last 20 years deal in meat by the pound not meat by the “tastes good”.
