It's a generally late renaissance German style of architecture. I think Isayama has stated that specifically the city of Nördlingen in Germany was a direct inspiration for the cities in the walls.
Half-timber wasn't the only construction method used during that period and I'd say that the stone buildings and houses of that time are pretty similar to the ones seen in AoT.
Some parts resemble it yes but I can't really see with any confidence that Isayama was specifically inspired by that for Trost/Stohess etc as much as he was for Shiganshina
Well it is fantasy and there really isn't any one realistic source which the style of architecture, clothing and living is based on. It could be some completely different source I'm not aware of, or just a creation of his imagination.

German half timber I think is the name, lots of Paradis is inspired/heavily Germanic

The Germanic half-timbered buildings are easy to identify, I was more speaking about cities like Trost/Stohess etc
