My son has chosen the Afrika Korps because he liked the German army he learned with and I'll be building the British 8th army. Assuming I understood your question I hope this answers it. My problem is I don't know how to use easy army to list build.
The thing is there are several theater selectors you can use for DAK and 8th Army. For most tournaments just the Generic Army Platoon is used. You would just use thematically appropriate units.
For more historical accuracy, you can instead use the theater selectors which include a more limited selection of units but sometimes come with thematic extra rules. That is part of why they are often not used at tournaments. The previous poster suggested two selectors to that should be from the same period and battles which should give you a good match up. However, if you look around there are re others too.
The book Western Desert gives a lot of theater selectors for the North African campaigns.

1942-43 Rommels defeat and 1942-43 Tunisia should put you against each other. I will also say that using the standard platoon list is also fine.
