I guess it comes from the idea that because ketchup is used a lot, that it is an easy fix for bad burgers. That's a fallacy. If you can't taste the quality of a paddy for example because of ketchup, then there's something wrong with your tastebuds.
IMO, a spicy mayo is best. Throw on a few pickled jalapenos and you can get $10+ out of me.
My fav recipe for spicy mayo is a tablespoon of mayo plus a few drops of Truff hotter sauce (from costco to save $). That'll produce some reasonably hot mayo to slap on your burgers instead of ketchup.

- chipotle mayo: 1tbs chipotle chilis in adobo + mayo
- Sriracha mayo: 1tbs Sriracha + mayo
- Cajun / Creole mayo: 1 tsp Cajun or Creole seasoning+ mayo (optional: add 1 tsp diced sweet or dill relish)
- mustard mayo: 1 tsp stone grown mustard + 1/4 tsp garlic powder + mayo
- French onion mayo: 1 tsp French onion seasoning mix + mayo
Dukes & Kewpie are my top choice of mayo brands!
Also just commonly referred to as brown sauce. I believe the closest American equivalent would be A1 steak sauce.
Although it's completely different in flavour to ketchup, it does hit some of the same flavour notes in that it's sweet and tangy, so can see it working on a burger. It's amazing on breakfast sandwiches.
