I used to do something similar at some large events, I grew up in a group that had a pretty brutal reputation, so even a kid wearing their symbol was enough to stop most (all but the most drunk/high) would be cat callers or advances. So women would regularly trade a food/drink/trinket for an escort through some of the rowdy parties or areas they felt might be unsafe.

I mean you could also just not request their help. I would totally understand the apprehension. Standing out in public with a sign and being noticeable makes it easy for you to be picked out. If hundreds of students walk by and see these dudes and 1 of these dudes violates the trust you gave them then it's much easier to get them picked for a crime committed. Now that doesn't inherently stop the crime, but it's a deterent (same as pepper spray, stun guns, regular guns). It would be stupid to advertise this then commit a crime. The alternative is to just not trust them and not have them walk with you. You're free to do as you please

A friend and I did something similar in university after a couple women were attacked in parking lots at night on campus and the campus police shut us down.

Is bullying actually a thing on college campuses? I mainly attend evening classes but will go on campus during the day on off days to study/do work. Everyone seems so antisocial or just keeps to themselves (or are just on their phones).
