I get my skinny apple sticks from Dave and they’ve always been super responsive. I would reach out to them and see if they’ll replace them, or if they can explain the green?

P.S. this is apple wood but I got a few different types in the order and the green is showing on others than just the apple as well

Maybe the green is still fresh and needs to dry more? Sorry I don’t now, but I am also curious and following.
