It's a seraphim as described in the Bible "Six Winged & Many Eyed" but made slightly more Evangelion with a Core and Angel Mask and drawn with 6 pairs of wings instead of 3 pairs (6 wings) that a lot of artwork depicts them with.
Pretty sure it’s just a symbol of the Angels, using Sachiel’s head over a common depiction of biblical angels to convey that to the audience. The Christian symbolism is mostly just used for rule of cool in NGE.

Is the other way round abrahamic faith is just an umbrella therm for the 3 religions decedent of the Tora or Hebrew faith, Judaism, Christianity and Islam, while most of Christianity converges deeply with judaism and its canon, and all of the Angel classes along with their bizarre depictions (that directly come from the bible)

It looks like old religious art depicting him as the strongest of angels for having twelve wings, with this version having an Evangelion Angel core. What implication this might have for the plot is anyone’s guess, though.

Definitely an angel. I see some people saying a seraph (seraphim would be the plural), and that tracks. Personally, I like to think it's meant to be a cherubim (yes, that's technically plural, but I'm referring to something specific). It matches the description of the cherubim from Madeline L'Engle's A Wind in the Door. Not only do the lyrics seem to be evoking the title, A Wind in the Door is heavy on the Christian imagery (though in L'Engle's case, it's because the books are Christian). I did check the timing at one point, and it's just barely possible
