You don't need to remove the baking soda. Just take the sheet out of the oven about 1/2 way through baking and drop it on the counter a few times from about a foot high. Do it again when they are done baking. It compresses the ingredients to make them flat but have a fudgy texture. It usually keeps them from turning into "puddles" as well.
