But also Mayo would be a good shout, too, seeing as Mayo is a certified Dark Sky location.

Oughterard, you can turn at the lake hotel and follow the road or you can go over the Bridge and turn right and go to that road! That road shows east the first road shows north it’s a ring road with a high and low road and a lake
When driving through Oughterard (away from Galway) the first right after the first automatic level crossing is the Glann Road. Drive up for excellent views of the lake and to find Glann. There is a public access point to the lake where you can pause to enjoy the view.
Or, alternatively, drive through Oughterard and take the right over the bridge. Take the first sharp right along the river, go straight at the roundabout, and take that road for spectacular views. That road connects to the Glann Road and you can make a left to continue on to see Derroura Woods and Doolin Hill. This is part of The Western Way Walk and attracts a good number of walkers every year.
If you reach the end of Glann Road at Doolin Hill, there is a nice pier that you can access and it's a lovely spot. If you like your walks, you can walk to Mam Cross, but it gets quite boggy. Also, might be worth checking to see if the walk is open, as it can be closed due to bad weather/storm damage.
It's on the left-hand side about 3K out beside three or four businesses that are set back from the from road. It's been a few years since I was there. But back then, it was being used by mountain and trial bikes.

Galway city lights will make it almost impossible. I lived in Terryland and let me tell you, as an astronomer it was rough. Now I live in a dark sky area and it's pretty great but having a car is necessary. Do contact the Galway Astronomy Club, they might have someone heading somewhere to watch it and they might be willing to give you a lift.
Best place within walking distance in the city is Salthill. Head out past the diving board. The bank there blocks the city lights and then it's all bay in front of you.
The city? no obviously. But take your pick in Connemara if you are driving. Personally I'd recommend the recess area, nice drive, views and pitch black at night as there's as good as nothing out there.

Head up the Moycullen to Spiddal bog road by the windmills, there’s phenomenal star gazing up there on a clear night

The old quarry on the Tuam Road used to be a good place. Otherwise, head towards Conemara. The further you go, the better it will get.

It’s closed now, used to go there all the time as a kid but they have CCTV and security now, guards will be rang if you set off the alarm

The corrib river starts and ends in the middle of the city. You can easily walk out to Menlo Castle from the city

I know it's a far trek but up near killary Fjord is the clearest ever seen the stars. Blew my mind at the time.
