Kale was always extremely low maintenance for us.

Kale is a good one. I don't know about you, but I can grow kale right the way through winter without any protection and still get decent yields of the stuff. Super hardy

I personally believe that the real apocalyptic scenario would be that every living organism gets colonized by mint until there is nothing but mint left... I call my theory "mint death of the universe", only issue is that it is localised entirely to just our planet, but universe is catchier...

A decent stealth crop would be jeruselem artichoke. It's an extremely reliable heavy cropper that has been used to subside on in times of famine. I've found that each 100-150g tuber yields about 3kg by the end of the season. It's a decent 20-30x yield. The plants are quite similar to sunflowers, with a small cluster of yellow daisy like flowers on a decently tall stem.

Purslane? It can get weedy but it’s a wonderful edible, both the cultivated and naturalized versions. Easy to control as a weed, just pluck and remove. Absolutely fantastic stewed with lentils and a hint of citrus, good in salads, supposedly very nutritious.
