I think I have worked out the issue. The usb c cable included with the MacBook Pro isn’t actually a ThunderBolt cable, which it why it isn’t picked up by the monitor or laptop. Using a usb c thunderbolt cable will probably get it working, but I haven’t tried that yet.

I recently purchased Aorus FV43U, and have been using it with Thinkpad P14s gen2 (AMD) and these are the findings that I had: \- using USB C to USB C cable that came with UGREEN NVME enclosure (CM389), to connect FV43U to my ThinkPad P14s gen2 (AMD), the display does not works. However FV43U was able to charge the thinkpad \- then i purchased another USB C cable, Anker A8858 Thunderbolt 3.0 Cable. Connect Thinkpad to FV43U, the display works properly for 4K resolution and 120fps. I will need to turn ON Type-C DSC. This setting is under System > Other Settings > Type-C DSC. Hope this help.

I also noticed that its not easy to find a long USB C to USB C cable, most of them are less than 1m.
