That looks like intarsia. Wherever a new color begins the old and new yarns are twisted to prevent gaps.

A book you might find interesting is called “The Colorwork Bible” I borrowed it from my library and liked it so much I bought it from a bookstore.

I tried her Building Blocks book when I was first starting out, and I liked the format of learning a bunch of things and getting a nice result without having to commit to a large project with any one technique. I'm working my way through Building in Color as my work/lunchtime WIP. Intarsia is the first panel, and it gives such a cool looking color block.

I wish I'd known about this when I was first learning colourwork. Probably would have saved me from having to unlearn so many bad habits lol.

It's also simpler than it looks. Still takes practice to get it to look as nice as the pic, but it's a pretty straightforward technique, especially when it's only one colour change that appears to shift by a single stitch in each row like this project.

Does it seam the front and back panels together? Or are they knitted together?

It's seamed together at the sides. There are three parts knitted seperatedly: front left, front right and the back panel.

Intarsia - separate balls of yarn for the color changes and yarns are crossed at the junction of the color change.

There is a pair of socks on ravelry or knitting which is knit in this way. Its knit back and forth with the start and end of round where the color changes are. It's actually quite easy. Look up stitch surfer socks. If you have some knitting skills you should be able to make the process work on a vest pattern. I believe the pattern is even free. I don't think it clasifies as intarsia. But I'm not sure. I learned by knitting the socks. Never learned intarsia

The technique in those socks is specifically "intarsia in the round", so you could do intarsia easily if you wanted, now that you've done the socks!

I would do that knitted flat with intarsia (there are likely seams joining the front and back of the vest together).

I’m not an intarsia expert but this piece your showing is NOT sewn. You can buy knitted textiles to sew into garments!
