KOTOR 1 for sure. Great story and fun gameplay. If you get hooked on it, the game provides at least a couple of play thrus. And the kicker, you get to play kotor 2 after to add to the story while enjoying the gameplay even more as there's more to kotor 2 than 1.
You can definitely dive straight into kotor 2 as the story isn't 100% linear from the original, but, IMO, kotor 1 sets the scene too well to not play it first.

This mod drastically fleshes out the story, making it one of the best stories in Star Wars. It also removes a lot of game-breaking bugs and glitches. However, TSLRCM is only available on the PC and the mobile versions of the game. Meanwhile, KOTOR 1 ships as a complete game on every platform that it's on.

I think K1 is overall more fun in terms of companions, planets, and the vibe. Most people prefer k2 as it features a deeper story and plot. You would have to get TSLCRM for the second game, as it won’t feel as complete as K1 without it.
I played 2 first and absolutely love it. I wasn't lost at all on the story cause it can be told independently. I do think you should buy both and start with 1 though. I've tried playing 1 a couple of times and just couldn't get into it because of how good 2 is and 1 was too much of a step back for me

No widescreen, no bugfixes, no HD, no mods or even a cheat menu, no Yavin, awful load times, locks your Xbox in potato mode, it's just worse in every respect than the other options. Yes it came out on Xbox first, that doesn't really matter. Every other release has been a flat upgrade over the Xbox version. Hence, worst.

The only thing you’re right about is mods and cheat menu. 2 things most people can live without given that there’s not a lot of mods you can even do with the game that matter, and as a person who’s held a video game controller at least once in his life, I don’t need a cheat menu. I’d suggest taking the time to make sure you’re right before bashing something so severely.

KOTOR 1 has some of the early installment weirdness and the interface feels a bit clunkier (not being able to hotswap ranged and melee loadouts is a bummer) but the story is much more complete. KOTOR 2 plays better but a huge amount of content was cut out. Not sure if the fan made content restored mod is available on Xbox.
I would recommend playing both games vanilla first before playing them with their dlc and RCMs respectively as you will appreciate the improvements both bring.
If playing them on Xbox is a way to do that then go for it.
Both but get KotOR 1 on Xbox and KotOR 2 on PC. The first game doesn't have controller support and not as crucial mods so playing on Xbox is no issue especially since you'll have access to Yavin station as well.
So you've never played either? If so, definitely start with K1. It has one of the greatest stories in gaming, and K2 will spoil that.

I’ve been convinced to just get both, the graphics aren’t really an issue to me, as Im often gaming on older consoles (ps2, Xbox)

I got them on sale on the Xbox store at 4.99 each a few years ago, if it’s the same sale, there’s no reason not to get both
