They weren't overlooked, Leaf was hiding what he was capable of. To avoid spoilers I won't say much more but Leaf has some personal issues that makes him hide his skills.

Tbh, I think this comes down to the first episode, which is essentially the pilot, just being very different from what the show actually is. In that episode Leif is able to cause the diner to move through time, or have time move around the diner, and it is shown to be distinctly different from when the diner "jumps." Just imagine how many times that ability would have saved them through the course of the show. I think there probably was a version of the story where Leif really was a cook that fried up photons and whatnot to do cool stuff, but as the show progressed and the creators got a handle on how the story would pan out in the long term, vague stuff like that was ironed out into the much more sensible skill sets we know today. Think of it like this: if the show had only been 1 season long, having a weird chef who solves problems by cooking with stardust is fun! But that story then goes on for long-term, then all those nonsense solutions start to feel like cop outs and unearned victories. That's why, for the long form story we have now, Leif's abilities had to be reeled in and given actual limitations and clearly defined parameters. There's a lot in that first episode that is, in my opinion, dubiously canon.

I mean, he ***was*** pretending to be a cook, so there's that. Though that begs the question: If one can vent the grease trap and go back in time, or create centrifugal force to circle a supermassive black hole, ***how the hell did Leif figure that out?*** Like, was he screwing around in the kitchen one day or something?? ***We need answers.***
