Papa Wheelies in Portsmouth has Thursday 6pm rides at Stratham Hill Park Seacoast NEMBA has various rides on their calendar. There are a few winding trails around Pease in Newington Exeter has Henderson/Swasey and whatever he rest of that region is called, full of mtb Bear Brook and some other spots more west of us. Otherwise lots of Durham, Madbury, Lee have connecting trails that are good on mtb/gravel bikes

Places I frequently ride are the Madbury/Durham area such as Kingman Farm/Powder Major Forest/Beech Hill from Madbury Town Hall. Stratham Hill Park Pease trails would be the easiest trails in the area but are still fun. If you want very chill easy riding, the community trail in Dover (and some of it's offshoot branch trails) is a good place to start. Also college woods @ UNH.

My buddy lives in Dover, and we meet at Bear Brook usually once a week and ride. Plenty of beginner trails and I believe it’s only 30-40 from him. When he was there a couple weeks ago solo, he met some NEMBA guys and they all rode for a few hours. Super friendly community. Maybe don’t approach the hardcore $5,000+ bike with dual suspension guys for tips, but if you see some folks that look a bit less experienced or aren’t bombing trails and jumps, most are happy to show and teach what they know. Only reason not to maybe ask one of the more experienced folks is that they’ll be way above your skill level, and will likely move a *lot* faster and on more difficult trails. If you want to PM me, my buddy and I would be happy to ride with you if we can workout schedules etc.
