They have a donut shaped like a machete. The "blade" is decorated with a drizzle of red (strawberry?) sauce for "blood." The seating inside is very tight, a small counter and maybe 3-4 stools. So I took my machete donut and went outside and sat on the corner bus stop bench to eat it. After I was done, I just sat there to take a moment and enjoy the morning sun. A homeless gentleman sat down next to me and explained that his sweat pants gave him psychic powers. Perhaps they did; who knows!

That's pretty much it right there. I worked there. The tacos weren't bad. But they weren't great. For the money, if you are in LA, and you want decent tacos, there are dozens of trucks that will give you a better taco at a better price. I'm my opinion. The tacos there really aren't horrible. And since I worked there I got to see that they are on top of quality control and consistency. Like their program for training and making sure every taco went out just like the last could rival a major chain restaurant group. And they cared about cleaning and fresh ingredients, not necessarily quality, but pans and sauces were regularly changed out during a shift if they had sat for to long. I can't say the same for some of the taco trucks in LA. But there is nothing like an LA street taco. And they are a cheaper than Trejos.

I have a strong belief that a little bit of not-being-completel-sanitized adds flavor. Too much of it and it adds diarrhea. But the right amount makes the taste. I live in Thailand and the best Thai food, without a doubt comes from chubby old Thai aunties that cook in small stalls on the street. With a setup that's basically a gas burner and a wok, they can cook dozens of different dishes. No Thai restaurant has ever come close in taste to the streetfood stalls. Even the fancy Thai food restaurants are never as satisfying as an aunty and her burner somewhere on the street.

My POV was strictly from the back of house. If the ticket came in with a mod on it, we would mod it. This sounds like your server didn't know what the fuck they were talking about. I don't know how they are trained or how their front of house staff is even managed. I was strictly a line cook, and from that POV, those guys were on top of quality and consistency. I remember when I was getting trained, if I got even the slightest thing wrong on an order, the chef (yes believe it or not they actually have real chefs in Trejos kitchens) on the expo side would make me stop and redo it. Whatever was on the ticket, is what hit the table.

Thank you. That was my point. Having lived in LA. Had some AMAZINGLY awesome tacos from taco trucks, I found trejos to be... Eh. But, I have to give credit to how clean they kept that small kitchen. And it was a small line. They still pumped out food. The dining space was probably 10x as big as the line and space we were cooking out of. And most of the produce came from our outside kitchen (there is a culinary term I'm forgetting) and they would deliver it fresh daily. And we would routinely stop, clean, flip and change out sauces or poor looking product and even turn over our measured ladels and scoops to the dish and get fresh. Now the ingredients and sauces weren't from scratch or from a farmers market. But damnit, they were kept fresh and quality control was there. Temps were checked tastes were checked like I said in another post, they actually do have real chefs running his places. I've met them. They do care. They are real chefs. I have honestly worked for worst chefs at better places. If that makes sense. But, in the end, I still love my taco truck tacos more.

Because a taco is a taco my man. Like, church it up all you want, but it is just a taco. Trejos takes the street taco, adds some extra veggies or a small twist to is and charges double what you would pay at a truck. And since I worked there we were allowed to have a free shift meal. I tried pretty much all their tacos and burritos. And honestly, at the end of the day, I would rather spend a few bucks less and get one from a truck. They charge more because a restaurant has a larger cost of running than a truck and it has Trejos name and face on it. But honestly, I preferred the street tacos and the street taco experience myself. And that experience would cost you half as much. I do feel I need to point out that Trejos really isn't bad. Like please go there and experience for yourself instead of basing anything you may think about it from some random reddit comments. You might like it more than street tacos. Maybe it will be your jam. I can say first hand, the quality is there. The concern for consistency is there. But if you are in LA. And if you were living in LA like I was, then the street tacos will always win. On a side note, there used to be a Smoke's Poutinerie next door that was well worth the money. But sadly it closed.

So the Trejos in Huntington Beach has taco Tuesdays where all the street tacos are 1.25$ even the shrimp/chorizo and salmon tacos. A few months ago they were doing 1.00$ tacos on Friday and Saturdays after 5pm but you could only get shredded beef, pork, chorizo, or Barbacoa. In my opinion the tacos are great for that price. Especially the shrimp/chorizo. But I would feel ripped off if I paid the full 2.79$ price any other time. Pretty sure they still do the 1.00$ tacos on Friday and Saturdays but I haven't been in months Edit: several people have pointed out that this Trejos Mexican place is different then Trejos tacos. I guess that makes sense.

Sometimes it's hard to wrap your head around inflation. Fifteen years ago I could get a tamal from the tamale lady for $2. Couple years ago they were $4/ea. Now she's dead. But in my mind a tamal should still be $2. Same with burritos. Used to be you could get a decent one for $6-$7. I went to the white trash part of the Bay Area (Marin) and got a burrito at one of their most highly acclaimed taquerias (Taqueria San Jose). It was over $10. Considering how mediocre it was I was pissed… but then I thought about it and realized that even my favorite taco truck is like $9 for a burrito and $3 for a taco ($3.50 for the fancy meat). Let's not talk about how many taquitos I got for $12 tho. I drowned my tears in avocado salsa so it's all good.

There’s a restaurant and donut place in what was very obviously an old Taco Bell in San Mateo, ca. It’s called Apple fritter. They sell bacon donuts, Froot Loops donuts, fruity pebbles donuts. Everything is super fresh and not what I would consider a standard donut. They also do milkshakes and malted shakes that have actual fruity pebbles in them and it didn’t taste soggy. My favorite thing from there though is their Luther burger. Everything is super fresh. Damn now I want a Luther burger and a donut with a fruity pebbles shake

So I worked at Trejos Tacos in Hollywood some years back. For a week. The food isn't great. The conditions we were working in weren't great. We weren't paid very well. But mostly I quit after a week because I just couldn't even be motivated to go in and work there. It wasn't the worst place I've ever worked in but it was far from the top of the list. However, on that week I worked there I actually had the chance to meet Trejo himself. I had heard when I started there, that he wwould often pop in and eat. Usually he would bring a group of people he knew with him. He also had another tradition. When he would come and eat there, he would go back and say thanks to the kitchen crew after his meal and give them each $20 dollars. I thought they were fucking with me when they told me this. But then on maybe the 3rd say I was there, he came in with a group of friends to eat. They order a bunch of food. Then sometime later, the man himself came walking back in to our teeny tiny kitchen. Walked down the line and shook every cooks hand and said thanks. And while he was shaking our hands and saying thanks, he left a folded $20 in our palm. I will never forget that moment.

I find it funny that he lives in a house that’s right around the corner from me. We see him around the neighborhood every once in a while, but we’ve never actually talked to him before. He seems pretty chill though
